MERLE'S FUDGE BALLS

Overnight, soak in individual jars:
- 1 cup almonds and/or hazelnuts
- 1/2 cup pine nuts
- 1 cup dates (mixed with raisins and/or apricots for variation)

Drain and discard soak water from nuts. In food processor, process the almonds until chopped. Add:
- The soaked dried fruit, pine nuts
- 1/2 cup raw almond or hazelnut butter
- carob/cocoa powder (to taste)
- 1/4 cup raw honey or maple syrup
- 1 Tbsp. pure vanilla
- 1 tsp. cinnamon

Process until fudge ball is formed. It should be soft. Add some of the fruit soak water if too solid. Wet hands in cold water and form mixture into small balls. Note: Chilling fudge for several hours makes handling easier. Roll in a variety of toppings: carob/cocoa powder, coconut, sesame seeds,
ground nuts.

Variation: Dehydrate below 110 deg. for up to 8 hours to desired firmness.

Store in tightly closed container in fridge for up to one month (esp. if dehydrated). Yields about 30 balls.

Shortcut: Sprinkle grated coconut onto parchment paper/teflon sheet on dehydrator tray. Spread fudge mixture about 1in/2cm thick. Shake powdered carob/cocoa over surface. Dehydrate. Cut into little squares. Refrigerate.


INSTANT CHOCO-LITE SAUCE
The Cure For Chocolate!

• Raw carob -1/4 cup
• Raw honey or soaked dried fruit (raisins or figs), and use the juice as a sweetener
• Add water to desired thickness
• Optional: add cinnamon, nutmeg, cloves, mint …

Blend and add to fresh fruit, nuts or even eat it all on its own! Add to fresh grapes and dehydrate for choco-lite raisins!


WIND’S HAPPY HEMP BALLS

- 6 scoops hemp oil (use scoop included in hemp protein package)
- 1 apple
- 1 banana
- Pinch celtic salt
- 2 scoops raisins (or currents, figs, prunes, etc.--I prefer raisins)
- 4 scoops loose liquid honey
- Zest (peal) of one orange (or lemon), 1 tbsp. Orange juice
- Put the above ingredients into blender. Let run for 2 minutes until thoroughly blended.

Pour all blended ingredients into a large bowl and add:
- 20-25 scoops Hemp Protein Powder
- 5 scoops raisins (or currents, figs, prunes, etc.)
- add chopped raw nuts, if desired

Stir to a cookie dough type batter (a little dry) so it can be made into balls and rolled in coconut or crushed nuts. This recipe courtesy of Living Harvest Hemp Company

HEMP HALVA

- 2 cups Tahini
- 4 tbsp maple syrup (mix together, then add and mix:)
- 12 scoops Hemp Protein Powder
- 4 tbsp carob powder

Press ½ ingredients into a pan; sprinkle 4 tbsp hemp seed nut and 4 tbsp pistachios on top. Press the rest of the ingredients over top. Chill and serve.
